Syrah
Picked across three cool mornings in early October and co-fermented with a whisper of Viognier skins, the Foothill Syrah is the truest expression of our upper slopes. Eighteen months in neutral French oak keeps the fruit honest and the structure quietly firm.
Opaque garnet with a violet rim.
Crushed blackberry, smoked black pepper, dried lavender, a thread of cured olive.
Full and supple, with graphite minerality holding the fruit in place.
Long, peppery, faintly meaty — it lingers a full forty seconds.
Lamb shoulder slow-roasted with rosemary and anchovy.
