Chardonnay
Hand-harvested at first light and pressed whole-cluster, this is Chardonnay built for the table rather than the cellar. We ferment in concrete egg and a handful of older barrels, stir the lees lightly, and let the limestone speak for itself.
Pale straw with a green glint.
Meyer lemon, white peach, crushed oyster shell, a wisp of toasted hazelnut.
Taut and saline, with a creamy mid-palate from light lees contact.
Clean and mineral, snapping shut with citrus.
Grilled halibut with brown butter and capers.
